Child Surprise Jacket
I'd like to make two child sized Surprise Jackets for my nieces. Has anyone done this? I'd love some advice/help.:)

How old are your nieces?

I've used the adult surprise pattern since my daughter was 2 years old.

One is 4 and the other is 7...they may be moving to a hot climate...I was thinking of just using thick yarn but they'll never use them.

well, the sleeves will need to be lengthened for older children. the 'adult surprise pattern contains a solution (Opinionated Knitter, pp 112-113) as does this website http://www.knitting-and.com/wiki/Baby_Surprise_Jacket#Lengthening_the_Sleeves
Hope this helps!

Make a baby size one first if you haven't made a jacket before.
Once you "see" how it works out you can adapt the pattern by adding extra body and aleeve stitches. Also you will need to adapt the front and back lengths.
Make notes as you work and then you can remember what you have done
